Lobster Rolls

  • 4 cups (250g) fresh Lobster meat, coarsely chopped, claws reserved whole
  • 3 celery stalks, finely chopped
  • 1 teaspoon (2g), finely chopped parsley
  • 1 fresh lemon, juice squeezed
  • ½ cup (115g) mayonnaise
  • sea salt
  • fresh ground black pepper
  • ½ head of leaf lettuce or iceberg lettuce, shredded
  • New England Style Buns (flat sides) or Hot dog style buns
  • ¼ cup (58g) unsalted butter, room temperature


Remove the lobster claws and set aside for garnishing the lobster rolls.  In a large mixing bowl, add the lobster meat, celery, lemon juice, mayonnaise, salt and pepper.  Mix to combine and taste.  Add additional seasoning if required.  Cover and chill in the refrigerator for 30 minutes to 1 hour before serving.  

When ready to serve, heat the grill to medium/high heat.  Butter the inside of each of the buns and place butter side down on the grill lightly brown.  Flip and lightly grill the outside of the bun.  Remove and add shredded lettuce to the bun and lobster filling. Garnish with lobster claw.
