Apple Turnip Casserole

Ingredients

  • 1 large or 2 small turnips 
  • ¼ cup (60g) butter 
  • 2 McIntosh apples
  • ⅓ cup (60g) brown sugar
  • ¼ teaspoon (1.25ml) fresh nutmeg
  • ¼ teaspoon (1.25 ml) salt 
  • ¼ teaspoon (1.25ml) pepper

Method

Peel and cut up the turnip and boil in salted water until fork tender. Drain well and mash until smooth and lump-free.

Peel and cut up the apples in 6 to 8 pieces and add to a small saucepan. Grate ¼ teaspoon (1.25ml) nutmeg over apples. Add ¼ cup (60ml) water and boil until soft.  Drain and mash.

Add the apples to the turnip and mash together.  Add butter, brown sugar and salt and pepper. Combine and serve immediately or transfer to an oven safe casserole dish and heat covered for 25-30 minutes at 350°F/176°C.
