Blue Cheese and Brie Crostini with Fig & Onion Jam

This simple crostini is taken to the next level of deliciousness when served with our fig and onion jam.

  • 1 baguette
  • ¼ cup (60ml) extra virgin olive oil
  • 5 ounces (141g) blue cheese
  • 5 ounces (141g) brie cheese
  • ¼ cup (60ml) liquid honey for drizzling
  • 2 fresh figs, sliced for garnish
  • 4-6 thyme sprigs

To make the crostini, slice the baguette into diagonal slices.  Brush each side with olive oil.  Set the oven to broil and add the baguette slices to a baking sheet.  Toast under the broiler till golden brown on one side and then flip over and toast the other side.  This process takes only seconds.

Remove crostini and place on a serving platter or board.  Add a slice of blue cheese to half of the crostini and a slice of brie on the remaining pieces.  Next, add a dollop of fig and onion jam on top of each piece of cheese.  Garnish with a slice of fig and a small sprig of thyme.  Drizzle with honey and serve.
