Caprese Rosemary Skewers

Makes 4 - 6 Servings
Threading a bocconcini ball with cherry tomatoes and basil leaves onto a sprig of rosemary gives each skewer all the elements of a Caprese salad in a single bite. This simple appetizer makes a delightful addition to any Italian inspired antipasti board.

Ingredients

  • 12 sprigs of rosemary, remove 3-4 inches (7.5-10cm) from bottom of stem leaving a sprig of leaves intact at the top
  • 12 red cherry tomatoes
  • 12 small bocconcini balls 
  • 12 large basil leaves
  • balsamic vinegar, for drizzle

Method

Skewer the rosemary by threading each sprig with a cherry tomato, basil leaf and bocconcini ball.  If basil leaves are large, roll or fold in half before skewering.  Serve with fresh olive oil and balsamic drizzle on the side.
