Cast Iron Skillet Brownie

Makes 2 or 6 Servings
This “small batch” recipe for a rich, chocolatey brownie is made in a 6” (15cm) cast iron skillet and is the perfect dessert for two. Top with whipped cream or ice cream and chocolate sauce for added decadence.

Ingredients

  • ⅓ cup (40g) all-purpose flour
  • ½ cup (100g) sugar
  • 2½ tablespoons (10g) unsweetened cocoa powder
  • ¼ teaspoon (1g) salt
  • ¼ cup (60g) unsalted butter, melted
  • 1 large egg
  • ¼ cup (60g) semi-sweet chocolate chips

Method

Preheat the oven 350°F/175°C.  

Spray a 6” (15cm) cast iron skillet with nonstick cooking spray.

In a medium bowl, whisk together the flour, sugar, cocoa powder, and salt.  Add in the butter and egg stirring with a wooden spoon until the batter is thoroughly mixed.  Stir in the chocolate chips.  Spread the batter evenly in the prepared skillet. 

Bake for 18-20 minutes for a gooey brownie.  Cook another 3-5 minutes for a denser brownie.

Let cool before serving with whipped cream or ice cream. 

Break out the spoons and dig right into the pan!

BROWNIE FOR A CROWD

Baker’s Note:  If baking for a bunch of brownie lovers, you can TRIPLE the recipe and bake in a 10” (25cm) cast iron skillet.  Just adjust the cooking time to 30-40 minutes for gooey goodness.  For a denser brownie, cook 5-8 minutes longer.
