Champagne Mignonette

Makes ½ Cup (120ml)

  • ½ cup (120 ml) champagne vinegar
  • 2 tablespoons (10 g) finely chopped shallots
  • 1 tablespoon (15 g) coarsely ground pepper
  • 2 teaspoons (40 g) kosher salt


Combine all ingredients in a jar. Shake and chill for an hour, then serve on fresh French Kiss oysters.
