Ingredients

  • 1 store bought pizza dough
  • ½ cup (115g) butter, melted
  • ⅛ cup (30ml) olive oil
  • ¼ bunch Italian parsley, stems removed, coarsely chopped
  • 2 cloves garlic, minced
  • red pepper flakes, one or two pinches, optional
  • ½ cup (45g) Parmesan cheese, grated
  • 1 cup (225g) mozzarella cheese, grated

Method

Preheat the oven to 375°F/190°C.

Let pizza dough rest at room temperature for at least one hour.  On a floured surface, cut dough in half and then in 1” (2.5cm) strips and again in 1” (2.5cm) pieces.  Roll into little balls and set aside on the floured surface.

In a microwaveable bowl, melt the butter and add the olive oil, parsley, garlic, red pepper flakes and ¼ cup (22.5g) of Parmesan cheese.  Mix until blended.  Grease the inside of the pan using the butter mixture.  Then start dipping the pizza dough balls and place in the bottom of the pan repeating till the pan is full.  One pizza dough will fill a 9” (23cm) springform pan.  Sprinkle the top with the remaining ¼ cup (22.5g) of Parmesan and mozzarella.

Place the springform pan on an aluminum foil covered sheet pan and bake for 20 - 25 minutes or until the dough is golden brown and the center bounces back when compressed.  Serve warm.
