Citrus Salad

Makes 4 - 6 Servings
This healthy salad bursts with vibrant flavor and colour. Tossing pink grapefruit and sweet orange slices in a bed of greens makes for a delicious side for any meal. Dress it with our Citrus Drizzle for extra dazzle.

Ingredients

  • 1 navel orange
  • 2 pink grapefruits
  • 2 cups (150g) arugula
  • 2 cups (150g) mixed greens
  • 1 small red onion, peeled and thinly sliced
  • ½ cup (62g) pistachios, shelled and slightly chopped

Method

Wash orange and grapefruits.  Take one grapefruit and cut it into ¼” slices.  Set the ends aside to use for juicing.  Place the grapefruit slices along the edge of a large plate or platter making a ring or border for your salad.

Next, supreme the remaining grapefruit and orange.   Slice off both ends and set aside.  Place the orange and grapefruit cut side down.  Start cutting off the peel.  Angle your knife slicing around the fruit removing the peel and pith exposing the flesh.  Carefully slice off any extra pith.  To section each slice, closely cut between each membrane allowing it to slide out.  

Add arugula and mixed greens to the platter.  Add red onion and slightly toss.  Add the grapefruit and orange slices arranging them across the platter slightly tucking them into the greens to make an attractive arrangement.  

Sprinkle with pistachios and dress with Citrus Drizzle.
