Grandpa’s Hermit Cookies

If you are a fruit cake lover like Linda, you will love these cookies. Her grandfather baked them especially for her each Christmas. They are bursting with raisins, walnuts, glazed fruit peel and seasonal spices. A taste of Christmas in every bite!

Ingredients

  • ½ cup (113g) butter, room temperature
  • 1 cup (200g) brown sugar
  • 2 eggs
  • 1 teaspoon (5ml) vanilla
  • 1½ cups (200g) all purpose flour
  • ½ teaspoon (2.5ml) baking soda
  • pinch of salt
  • 2 teaspoons (10ml) cinnamon
  • ½ teaspoon (2.5ml) ground nutmeg
  • ½ teaspoon (2.5ml) all spice
  • ¼ teaspoon (1ml) ground cloves
  • 1 cup (160g) raisins
  • 1 cup (115g) walnuts, chopped
  • 1 cup (75g) candied fruit peel, chopped

Method

Preheat the oven to 350°F/176°C.

In a medium bowl, cream the butter and sugar together.  Add the eggs and vanilla and beat well until fluffy.

Add the flour, baking soda and spices and combine completely.  Stir in raisins, walnuts and candied fruit peel.  Using a one tablespoon (15ml) size cookie scoop, drop cookies onto a parchment lined baking sheet, 2 inches (5cm) apart.

Bake 8-10 minutes until bottoms are lightly browned.  Remove from the oven and cool on racks.
