Harvest Fruit Crumble

Makes 6 - 8 Servings
Who doesn’t love a good comforting dessert made with fresh fruit and topped with a cookie-like topping? Our simple recipe is made in a slow cooker allowing the flavors to meld while the room fills with its intoxicating aroma. A great fuss-free recipe to add to your Thanksgiving Dessert menu when you want something to add to the pumpkin choice.

Ingredients

FRUIT FILLING

  • 3½ pounds (1.84kg) Granny Smith apples, cored, peeled & slices
  • 3½ pounds  (1.84kg) pears, cored, peeled & slice
  • 1 cup (150g) craisins (dried cranberries)
  • ½ cup (100g) white sugar
  • 2 tablespoons (30ml) corn starch
  • 1 teaspoon (5ml) vanilla
  • 2 teaspoons (10ml) cinnamon
  • juice ½ lemon
  • cooking spray

TOPPING

  • 1 cup (120g) flour
  • ¾ cup (67.5g) rolled oats
  • ¾ cup (135g) brown sugar
  • 1 teaspoon (5ml) cinnamon
  • ½ cup (120g) butter, cut into small cubes

Method

Spray the slow cooker with the cooking spray.  Lay the fruit slices in the bottom of the cooker.  Add the rest of the ingredients for the filling and mix well.  Cover and cook on high for 30 minutes.

While the filling is cooking, combine the flour, oats, brown sugar and cinnamon in a large bowl. Cut the butter into the mixture using a pastry blender or your fingers until it resembles small crumbles.  Place the crumble mixture evenly on top of the fruit, cover and continue to cook for 3 hours on the high setting until the fruit is fork-tender.  Remove the lid and let cook for another 30 minutes as this allows the top to crisp up.

Serve with vanilla ice cream.
