Left-Over Turkey Casserole

Ingredients

  • 1-2 cups (90-180g) dressing (stuffing)
  • 2 cups (250g) leftover turkey pieces/slices
  • 1-2 cups (90-180g) sweet potato or turnip
  • 2 cups (400g) mashed potatoes
  • 1 cup (100g) cranberry sauce, we used the Village Grocer brandied version
  • salt and pepper to taste

Method

Preheat the oven to 350°F/177°C.

Lightly grease a casserole dish with butter or oil. Add the dressing (stuffing) and completely cover the bottom of the dish. Next, layer the turkey pieces evenly over the dressing (stuffing). Season to taste with salt and pepper. 

Add a layer or dollops of sweet potato or turnip. 

Add spoonfuls of the cranberry sauce evenly over dish and top the dish with mashed potato. 

Spread the mashed potatoes and create a decorative pattern with a fork or spoon. Season top with salt and pepper. Cover with aluminum foil and bake for 25-30 minutes at 350°F/177°C or until hot. 

Serve with gravy and extra cranberry sauce.
