Old-Fashioned Gingerbread Cake

Ingredients

  • ¾ cup (180ml) brown sugar
  • ¾ cup (180ml) butter, unsalted & softened
  • ½ cup (125ml) molasses
  • ¼ cup (60ml) water
  • 2 large eggs
  • 2¼ cups (560ml) all-purpose flour
  • 1 teaspoon (5ml) baking soda
  • 2 teaspoons (10ml) baking powder
  • 1 tablespoon (15ml) ginger powder
  • 1 teaspoon (5ml) cinnamon
  • ½ teaspoon (2ml) nutmeg
  • ¼ teaspoon (1ml) kosher salt
  • 1 cup (250ml) boiling water

Method

Preheat the oven to 350°F/180°C.

Cream together the sugar and butter in a large bowl until light and fluffy.  Mix in the molasses,  eggs, and water and combine well.  

In a separate bowl, whisk together the flour, baking soda, baking powder, spices, and salt.  Add the dry ingredients to the wet mixture and blend until smooth.  Stir in the boiling water and stir until batter is fully blended.  

Grease a 9x9” (23x23cm) oven-to-table baker.  Pour in batter and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. 

Let cool before icing.  Top with our Brown Sugar Glaze.
