Ingredients

1 store bought pizza dough

½ cup (125ml) extra virgin olive oil

1 teaspoon (5ml) sea salt flakes

GARNISH

Sunflower seeds

Fresh Rosemary, chopped and whole sprigs

Method

Preheat the oven to 425°F/218°C.

Coat a 13” x 19” (33cm x 48cm) baking pan with ¼ cup (60ml) olive oil.  Using the palm of your hands spread out the pizza dough to fit the baking pan.  Using your fingertips, press down on the dough making dimples across the surface. Make sure to push your fingertips through the dough.  (These dimples reduce the air in the bread and prevents it from rising too quickly.)

Brush the remaining olive oil over the top of the dough covering it completely.  Scatter the top of the dough with fresh rosemary, herbs of your choice or seeds.  Sprinkle the flaky sea salt evenly across the top.

Bake for 20-25 minutes until the focaccia is golden brown.  Let cool for 5 minutes.

Slice and serve.

Baker’s Note:

To make your focaccia look more artisanal, divide your dough and use a 8” x 8” (20cm x 20cm) baking pan and a 4” x 4” (10cm x 10cm) square or round baking dish and add toppings.
