Silver Dollar Pancakes

Ingredients

  • 1 cup (120g) all-purpose flour
  • 1 ½ teaspoons (7.5ml) baking powder
  • 2 teaspoons (10ml) sugar
  • ¼ teaspoon (2.5ml) salt
  • 1 egg
  • 2 tablespoons (30ml) butter, melted
  • 1 cup (240ml) whole milk
  • 1 teaspoon (5ml) vanilla
  • canola oil

Method

Add flour and baking powder to a small mixing bowl, mix till blended.  Add egg, sugar and salt to a medium mixing bowl and whisk.  Then add melted butter, milk and vanilla.  Whisk again.  Add dry ingredients, mixing with a wooden spoon until blended.  Do not overmix, batter can be lumpy.  

Heat skillet over medium high heat.  Brush the pan lightly with oil and drop the batter using a small scoop or large spoon.  Flip the pancakes when bubbles appear in the batter and they start to pop.  Flip over for about 1 minute until the underside is golden brown.

Serve hot with a pad of butter and real maple syrup.
