Yogurt Fruit Bars

  • 1½ cups (180g) whole wheat flour
  • ¼ cup (40g) splenda
  • 1 teaspoon (2.5g) baking soda
  • ½ teaspoon (1.25g) baking powder
  • 1 teaspoon (2.5g) cinnamon
  • ½ teaspoon (1.25g) ground ginger
  • 1- 6 ounce (168g) package mixed dried fruit, coarsely chopped
  • 1 cup (225 g) plain fat-free yogurt or 1 cup (225 g) low-fat plain yogurt
  • 1 large egg
  • ½ cup (120 ml) apple juice
  • 2 tablespoons (30 ml) oil
  • nonstick cooking spray


Preheat the oven to 350°F/100°C.

In a large bowl, mix all dry ingredients. Add dried fruits.

In a medium bowl, combine yogurt, egg, apple juice concentrate, and oil. Make a well in the center of the dry ingredients and add the wet ingredients until blended.

Coat a 9” x 9” (23cm x 23cm) pan with vegetable spray, spread batter in pan.

Bake for 35-40 minutes or until done. Cool 10 minutes before slicing.

Slice into 8 servings. Freeze in individual portions if desired.
