Avocado Toast

Makes 2-4 Servings
Make this easy avocado toast as an appetizer or main. Top it with vegetables or even an egg to make it a meal. It is packed with fibre and the “good” unsaturated fat!

  • 2 avocados, ripe
  • 2 tablespoons (30ml) fresh lemon juice
  • ½ teaspoon (2.5ml) sea salt
  • Olive oil
  • Maldon salt flakes
  • 2-4 slices of toasted bread


Remove avocado pulp from avocado and add to a bowl.  Add lemon juice, salt and mash the avocado with a fork or potato masher.  Mash till smooth leaving some chunks.

Toast bread and place on a serving plate.  Add a couple of dollops of mashed avocado to cover the bread to the edges.  Drizzle with olive oil and lightly sprinkle with Maldon salt flakes.

Chef Note: Make your toast super attractive by garnishing with sliced vegetables, sesame seeds or red pepper flakes for a little heat. Make a delicious main meal by adding a poached or hard boiled egg.
