Bacon Cheese Ball with Chives and Pecans

Ingredients

  • 1 cup (250ml) cream cheese, softened
  • 1 cup (250ml) old cheddar cheese, shredded
  • 10 slices bacon, cooked to crisp, finely chopped & divided 
  • 2 tablespoons (30ml) fresh chives, finely chopped & divided
  • 1 cup (250ml) pecans, finely chopped & divided
  • 1 clove garlic, minced
  • 1 teaspoon (5ml) chilli powder
  • 1 teaspoon (5m) onion powder
  • sea salt & freshly ground pepper to taste

Method

In a medium bowl, combine the cheeses. Stir in the garlic, chili and onion powders.

Add half the bacon, half the chives and half the pecans. Season with salt and pepper.

Place the mixture onto a sheet of plastic wrap and shape into a ball. Refrigerate for 20-30 minutes to harden.  

In a shallow dish, combine the remainder of the bacon, chives and pecans.  Roll the chilled cheese ball in the mixture and coat completely.  Wrap again and return to the refrigerator for at least an hour.

Serve with your favorite cracker. (Can be made in advance and refrigerated up to 3 days)
