Bannock Bread

Ingredients

  • 4 cups (480g) plain flour
  • 4 teaspoons (20ml) baking powder
  • 2 teaspoons (10ml) fine salt
  • ½ cup (120ml) olive oil, plus more for drizzling
  • 1½ cups (350ml) warm water
  • 2 tablespoons (30ml) chopped fresh rosemary, plus more for sprinkling
  • ½ cup (45g) grated parmesan cheese

Method

Mix flour, baking powder and salt in a large bowl.

Add olive oil, water and rosemary and mix well. Work the dough until it gets smooth.

Take a piece of dough and roll it into a long sausage shape.  Drizzle with Olive oil and sprinkle with rosemary leaves and Parmesan cheese.

Take a clean stick and twine the bread around the end.  Bake over an open fire or in a fireplace for about 5 minutes.
