Catalan Tomato Bread

Pan Amb Tomaquet, as it is known in Catalan is one of the most popular dishes in Spain. Simply made by toasting bread and rubbing a garlic clove and tomato over the toast with a sprinkle of sea salt, it makes for a delicious starter or tapas.

Ingredients

  • 1 large rustic bread, flat ciabatta loaf or a baguette
  • 2 large cloves of garlic, peeled and cut in half lengthwise
  • 2 large ripe tomatoes
  • extra virgin olive oil
  • sea salt

Method

Set the oven to broil.  Cut loaf of bread in half lengthwise and slice each half into even pieces approximately 2” (5cm) wide.  Place the slices cut side up on a baking sheet.  Place the bread under the broiler, watching carefully, and toast to golden brown.  Remove the baking sheet and flip the bread over and lightly toast the other side.  

Next, cut the garlic cloves in half and rub each piece of bread with the flesh of the garlic clove.  

Cut the tomatoes in half horizontally and place a box grater in a bowl.  Rub the flesh of the tomato over the large holes of the grater. Discard skin and drain extra fluid.  Spoon tomato mixture over each slice of bread and sprinkle with sea salt. 

Serve immediately.
