Goat Cheese Log with Cranberries and Mixed Nuts

With its festive flavors, this goat cheese log will be a great addition to your cheese board during the holidays.

  • 1 large log goat cheese (300g), chilled
  • ¼ cup (60ml) walnuts, finely chopped
  • ¼ cup (60ml) pistachio nuts, finely chopped
  • ¼ cup (60ml) fresh cranberries, finely chopped
  • 2 teaspoons (10ml) thyme leaves, finely chopped
  • ½ cup (125ml) cranberry sauce


In a medium bowl, mix together the walnuts, pistachios, cranberries and thyme leaves.

Spread out the mixture on a baking sheet. Roll the goat cheese log over the surface covering it completely with the mixture.  Wrap it in plastic and refrigerate until it is ready to serve.  

Serve it with your favorite cranberry sauce and crackers.

This recipe can be made in advance and refrigerated until ready to serve.
