Place dried chickpeas in a colander and rinse well with water.  Place in a large bowl and cover with 2 inches (5cm) of water as the beans will expand.  Cover the bowl and let them soak overnight.  
In the morning, drain the beans in a colander  and rinse thoroughly.  Place the beans in a large pot and cover with 2 inches (5cm) of water.  Add ½ teaspoon (2.5ml) of salt (if desired), cover and bring to a boil.  Reduce heat and simmer  for 1-1½ hours until tender.  While the beans are cooking be sure to skim the top to remove any foam. Once cooked, drain the beans in a colander and cool to room temperature.
