Green Beans with Plum Tomatoes

Green beans cooked with plum tomatoes are a traditional vegetable side dish throughout Tuscany.

Ingredients

  • olive oil
  • red onion, small, finely chopped
  • 3 garlic cloves, peeled and minced
  • 2 pounds (900 g) ripe plum tomatoes, skin removed and chopped
  • 1 pound (450 g) green beans, wash and ends removed
  • handful of fresh basil leaves, roughly torn
  • sea salt
  • freshly grated black pepper

Method

Heat olive oil in a large pan. Add the onion and saute for 5 minutes until soft. Add the garlic and cook for another minute. Add in the tomatoes and simmer for a few more minutes. Add the green beans and basil leaves. Season with salt and pepper. Cover and continue to cook on low heat for 20 - 30 minutes, checking periodically to make sure the beans are not sticking to the pan. Add a little water if necessary.

Serve when beans are tender but still firm.

Can be eaten warm or at room temperature.
