Celeriac Fries

Ingredients

  • 1 medium celeriac (Celery Root)
  • 3 tablespoons (45ml) extra virgin olive oil
  • pink sea salt and pepper, to taste

TOPPINGS

  • spices or herbs can be added, about ½ to 1 teaspoon (2.5 - 5ml)  
  • sesame seeds (try toasted or black)
  • coriander seeds
  • caraway seeds
  • fresh parsley
  • fresh basil
  • fresh chives

Method

Preheat the oven to 450°F/230°C.

Cut the Celeriac into four pieces, then peel it.  Cut sticks ½ inch (13mm) thick.

Add to a saucepan with enough water to cover and a pinch of salt, and boil for 10-15 minutes, to soften slightly.

Once the Celeriac is done, drain away the water and add Oil, plus the Salt + Pepper to the saucepan and mix well.

Place the fries on a lightly oiled cookie sheet and bake for 15 to 25 minutes or until golden brown. 

Flip occasionally.  Sprinkle with any desired toppings and enjoy!
