PB&K (Pineapple Banana Kale) Smoothie Bowl

  • 1½ cups (225g) kale, stems removed
  • ½ cup (120ml) almond milk
  • 2 cups (300g) chopped frozen pineapple
  • 3 ripe and sweet peaches
  • 1 frozen banana
  • juice of ½ lime
  • 2 tablespoons (22g) chia seeds
  • 3 dates
  • 1 teaspoon (5ml) cinnamon
  • 1 tablespoon (12g) almond butter


  • 1 peach
  • 2 pineapple slices (thin)
  • ¼ cup (40 g) sunflower seeds
  • ½ teaspoon (2.5ml) cinnamon powder
  • 2 cinnamon sticks
  • 2 kale leaves, only use a small piece for each smoothie 
  • 2 tablespoons (24g) almond butter 


Blend the kale and the almond milk in a blender until smooth.

Add the remaining ingredients and blend again.

Mix the almond butter with the cinnamon powder.  Swirl onto half of the bowl.  Place a thin slice of pineapple on the other half.  Thinly slice a peach and place half atop the pineapple slice.  Anchor the two ends with a sprinkling of sunflower seeds, a kale leaf, and a whole cinnamon stick.
