Lemon Vinaigrette... It's Our Famous Recipe

Makes ¾ cup (175ml)
We have been making this lemon vinaigrette for years - it’s our “go-to” salad dressing! We like to double the recipe and store it in the fridge for a day or two because it pairs so beautifully with most salads. Just the right amount of tang and tartness to make every salad taste delicious. For a milder taste, eliminate the garlic and reduce the dijon mustard to a teaspoon.

Ingredients

  • ½ cup (120ml) extra virgin olive oil
  • 4 tablespoons (60ml) lemon juice
  • 1 clove of garlic, minced
  • 4-6 croutons, crushed
  • 1 tablespoon (15ml) dijon mustard
  • ½ teaspoon (2.5ml) sea salt
  • ¼ teaspoon (1.75ml) pepper

Method

Add all ingredients to a mason jar and shake until emulsified.  Refrigerate until ready to use.  May be stored for 2-3 days.
